J. Fox and Kevin Haverty opened their first sustainable butcher shop--Hudson & Charles Local. Sustainable. Grass-fed Meats--on December 28, 2013 in NYC's West Village. Their second location opened in April 2016 on the Upper West Side. They set out to create a custom-cut butcher shop that sources its animals from farms that prioritize regenerative farming practices and who treat their animals humanely. They are both recovering vegetarians who wanted to seek out a sustainable way of introducing meat back into our diets. They reside in Brooklyn, New York.
